Biodynamically grown Chardonnay from Orange. The grapes were picked early and thrown on a mixture of destemmed and whole-bunched skins, where the free-run juice was drained out over a couple of days until the barrel was filled.
Then after a total of three long, somewhat gone but not forgotten years sleeping on gross lees, this super freaky high-acid and slightly oxidative wine was bottled without the addition of sulphur straight out of the barrel.
Stewy apple pies, toasted almonds and citrus peels.
