Biodynamic Merlot grown on Ikigai Farm in Manildra. It rained quite heavily the day before the grapes were picked, resulting in some waterlogged bunches and some wild pH readings.
But nonetheless, whole bunches were thrown into a sealed tank to induce some carbonic fermentation. After two weeks on skins, the grapes were pressed off into neutral oak and left to rest for an ambiguous two and a half years before being bottled without the addition of sulphur.
Lots of mulberry jam, olive brine and cranberry juice. A super light-bodied red to be drunk chilled.
Reminds me of ocean swims in the rain.
