Organic skin-contact Chardonnay grown in Borenore, NSW.
The vineyard sits at a groovy 870 m in elevation and is certified biodynamic and organic.
Grapes were hand-destemmed into the amphora and left for two months. The vino was then basket pressed to neutral French oak, where it rested for 10 months before it was bottled straight out of the barrel without the addition of sulphur.
This wine is somewhat wild and a lot silly, chewy and textural with a nice grungy acid line.
