Biodynamic Chardonnay grown in Borenore. The grapes were picked slightly underripe and tasted like sherbet green apples. The fruit was bucketed and wrapped, and it was intended to sit for an extended, gentle carbonic fermentation.
Although due to unforeseen circumstances, after 5 days on skins, the liquid was drained off into a stainless steel tank where it lay resting for a year.
Bottled without the addition of sulphur.
A grippy cuvée, full of friction, lemon sherbet, and serendipity.
