Biodynamic Chardonnay grown in Borenore. The grapes were picked a little underripe and were tasting like sherbet green apples. The fruit was bucketed, wrapped and intended to sit for an extended gentle carbonic ferment. Although due to unforeseen circumstances, after 5 days on skins, the liquid was drained off into a stainless steel tank where it lay resting for a year. Bottled without the addition of sulphur.
