Biodynamic Chardonnay grown in Borenore, Orange. After the long drive back from central NSW, the grapes were destemmed back on the coast. Free-run juice was separated from the skins and strained into some neutral oak through a trusty flour sifter.
The wine was forgotten about for 18 months before being bottled without the addition of sulphur straight out of the barrel.
