Organic Syrah and Pinot Gris grown in Molong. 50/50 blend, foot stomped, left overnight and then basket pressed to neutral French oak. A slow leak began to seep from the croze of the barrel, and after three months of trial and error, I was able to melt sealing wax into the join, which fixed the leak.
So after a total of two years in a barrel, this weird oxidative-rosato-style wine was born. No sulphur, lots of wild, yeehaw.
Think tangerine dreams, chewy strawberry Zappos and toasted coconuts.
